When you think of gluten free diet, what do you think? Do you think of it as a fad? A way to lose weight? No thoughts?
I must admit when I first heard of eating gluten free, I thought it would never ever be my lifestyle. After all my social life revolved around gluten. I mean.. from dinners out, movies with snacks, drinking with friends.. everything seemed to contain gluten, right?
A few years back I was told that there was a chance I had Celiac Disease, to be 100% I was told I had it but no proof then later found it is at least an allergy/sensitivity (depending on what doc you talk to). I also have PCOS which in research it also shows to eat gluten free.
After years of playing mind games with myself I realized that gluten was causing my life to be less than desiresble. I was so sick all of the time. The above photo shows the insane side effects I had with swelling due to the gluten. In fact, this photo was taken of me the same day. I would have spells of pain, where all I could do was lay down and felt bloated and had hives at least three times a week. Misery in the health department was what I dealt with on a daily basis.
After a long journey of self doubt and trial and error I finally got secured on a gf (gluten free) diet. After just a few weeks I had lost 20 pounds, my energy level went from a 2 to a 10 okay, at least an 8! I had a few spells but remained true to myself and the diet I knew was and is best for me.
Of course when retraining your mind to like things you aren't used to eating it isn't easy. I honestly felt less than happy when trying different gluten free dishes as it just wasn't the same. That is until I found the brand All But Gluten. Martin's here in town carries it, and I must admit walking into the aisle with this brand is like Christmas everyday for us allergy having individuals. As for me, I am currently gluten free since Feb, as when I was pregnant my allergy went away completely *weird right!?* I have much more energy and only have the occassional swelling (other allergens/PCOS).
